Korean Style Pork Chops with Charred Mango and Red Onion

Ingredients

> 4 (4 - 6 oz) boneless pork loin chops
> 1 tbsp soy sauce
> 1 tbsp Asian chili garlic sauce
> 1 tbsp toasted sesame oil
> 2 tbsp dark brown sugar
> 1 tbsp lime juice
> 1 tbsp peeled and finely grated fresh ginger
> 1 tbsp minced garlic
> 2 tbsp hoisin sauce
> 1 large mango
> 1 medium red onion

Preheat oven to HIGH broil and an oven rack 8 inches from top of the oven.

Place the pork chops on an aluminum foil lined rimmed sheet tray. Cut the mango and red onion into large chunks and place around the pork chops.

Add together the soy sauce, chili sauce, hoisin, sesame oil, sugar, lime juice, garlic and ginger in small bowl. Whisk together until smooth. Brush mixture on both sides of the pork chops and drizzle any remaining sauce on the cut mango and red onions.

Broil for 6-8 minutes or until pork chops are lightly charred. Remove from oven and flip chops, then return to oven and broil for an additional 2-4 minutes or until chops reach an internal temperature of 145 F and/or no pink remains.
