Mini Grape Upside-Down Cakes

Sweet and tart grapes are an unexpected and delicious addition to these little cakes, which are great warm for dessert (top with whipped cream or ice cream) or packed in a lunch.

> 2 cups seedless red grapes
> 2 tbsp sugar
> 1 (15.2 oz) yellow cake mix
> 1/2 cup vegetable oil
> 3 large eggs
> 1 tbsp orange zest
> 1 tbsp lemon zest
> 1 tbsp confectioners sugar


Preheat oven to 350°F. Grease a standard cupcake pan. Slice grapes in half and mix with sugar. Divide grapes evenly among the cavities.
Prepare cake mix according to box instructions, using 1 cup water, the oil, and eggs. Fold in orange and lemon zest.
Pour the batter over the grapes, filling each about ¾ of the way up. Bake for 15–17 min. or until a toothpick inserted into the center comes out clean. Remove from oven and cool. Turn the cupcakes out onto a cutting board. Dust with confectioners sugar.
