Lemony Pork Chops over Couscous

Couscous, which cooks in minutes, is a busy home cook’s best friend. Pair it with sweet peas and seared pork for this hearty weeknight dinner that comes together in a flash.

Ingredients

> 1 1/4 cups water
> 1 cup uncooked couscous
> 1 1/2 cups frozen peas, thawed
> 1 tbsp olive oil
> 1 (16 oz) pkg Nature's Promise Boneless Pork Chops
> 2 tbsp butter
> 1 tbsp minced garlic
> 2 tbsp lemon juice
> 1 tbsp chopped chives

Add the water to a medium pot and heat to a boil on high. Stir in the couscous and peas. Season with salt. Cover pot and remove from heat. Let sit 5 min.

Meanwhile, in a 12-inch skillet, heat the oil on medium-high. Season the pork chops with salt and pepper. Cook pork chops 2–3 min. per side, until fully cooked (145°F on a meat thermometer).

Transfer pork chops to a plate. Reduce skillet heat to medium-low. To skillet, add the butter and stir in the garlic. Cook 1 min., until garlic is golden and butter is melted. Stir in the lemon juice. Remove from heat and pour sauce over pork chops. Serve over couscous and garnish with the chives.
