Loaded Stuffed Sweet Potatoes

Ingredients

> 2 (about 1 lb each) large sweet potatoes
> 4 green onions
> 1 tbsp olive oil
> 1 lb 85% lean ground beef
> 1 (1 oz) packet Nature's Promise Organic Taco Seasoning 
> 1 cup Nature's Promise Organic Shredded Mexican Blend Cheese
> 1/4 cup light sour cream

Preheat oven to 475°F. Halve the sweet potatoes lengthwise. Arrange halves facedown in a microwave-safe baking dish with 1 tbsp water and cover with plastic. Microwave 10 min., until tender.

Meanwhile, slice the green onions, reserving the green parts for garnish. In a 12-inch skillet, heat the oil on medium-high and add white parts of green onions. Cook 1 min. Add the beef and taco seasoning. Cook 5 min., until beef is browned, breaking up meat with back of spoon. Remove from heat.

Scrape flesh from sweet potatoes into skillet and stir to combine. Stuff beef filling into sweet potatoes and arrange on baking sheet. Top with cheese.

Bake 10–12 min., until cheese is melted. Serve topped with sour cream and reserved green onions.

Tips

To freeze, after stuffing potatoes and topping with cheese, wrap individual potatoes tightly in foil. To reheat, remove from foil and microwave 3 min. Top with sour cream to serve.
