Maple Mustard Glazed Chicken and Sweet Potatoes

Ingredients

> 1 tbsp olive oil
> 2 lbs chicken drumsticks or thighs
> 1 lb sweet potatoes
> 4 tbsp Taste of Inspirations® Maine Maple Mustard
> 1 tbsp chopped rosemary
> 1 tbsp minced garlic
> 1 cup low sodium chicken broth

Steps

Preheat oven to 425F. Heat a large oven proof skillet or cast iron pan over medium high heat.

Add the oil to the hot skillet. Season the chicken drumsticks or thighs with salt and pepper. Add to the hot pan and brown the chicken on all sides.

Meanwhile, cut the sweet potatoes into large chunks. Add to the pan with the browned chicken.

Mix the Taste of Inspirations Maine Maple Mustard with the chopped rosemary and chicken broth. Pour over the chicken and sweet potatoes.

Place entire skillet in the oven. Bake for 25-30 min or until chicken is fully cooked and reaches a temperature of 165 F.
