Maple Spiced Roasted Persimmons

> 1/4 tsp ground cinnamon
> 1 tsp grated fresh ginger, (1/8 tsp dried)
> 1 tbsp orange zest
> 2 tbsp orange juice
> 2 tbsp maple syrup
> 2 tbsp water
> 1/2 cup fat-free plain Greek yogurt
> 2 tsp honey
> 1/2 tsp vanilla extract
> 4 Fuyu persimmons


Preheat oven to 400ºF and set the oven rack 8 inches from the top.
In a small saucepan, combine the cinnamon, ginger, orange zest and juice, maple syrup, and water. Cook, over medium high heat until the mixture comes to a boil. Let boil for 1 minute, and then remove from the heat.
3 Whisk together the yogurt, honey and vanilla. Refrigerate until ready to use.
Cut each persimmon in half width wise. Brush with the spiced maple syrup mixture. Bake for 15 min. then turn the oven to High Broil and broil for an additional 5 min. or until persimmons are lightly brown and caramelized. Let cool for 5 min., and serve warm with a dollop of the vanilla honey yogurt.
