Mashed Butternut Squash

Ingredients

> 2 (14 oz) pkgs Nature's Promise ® Organic Butternut Squash
> 1 tbsp olive oil
> 6 cloves garlic, peeled
> 2 tsp fresh thyme
> 2 tbsp heavy cream
> 1 tbsp chopped parsley (optional)

Steps

In a large microwave-safe bowl, combine the squash, oil, garlic, thyme, and ¼ cup water. Season with salt and pepper. Cover with vented plastic and microwave 10–12 min., until squash is tender, stirring halfway through.

To a food processor, add the cream, squash mixture, and any liquid from bowl. Pulse 30 sec.–1 min., until squash mixture is smooth. Transfer butternut squash mixture to a serving bowl. Garnish with the parsley, if desired.
