Matzo Pancakes with Berries and Honey

Ingredients

> 8 sheets matzo
> 8 large eggs
> 1 tbsp sugar
> Cooking spray
> 1 1/2 cups berries
> Honey, as needed

In a medium bowl, break the matzo into small pieces. To bowl, add about ½ cup water to soften matzo. Let sit 1 min. Drain matzo of excess water.

In a medium bowl, beat together the eggs, sugar, and a pinch of salt. Add egg mixture into matzo. Lightly spray a nonstick skillet or griddle with the cooking spray and heat over medium. To test if skillet is hot enough, flick a drop of water onto surface; it should sizzle.

Scoop ¼ cup batter for each pancake into skillet. Cook 1–2 min., until edges begin to set and bubbles start to form. Flip pancakes and cook another 1–2 min., until both sides are golden brown. Repeat with remaining batter. Serve immediately, topped with the berries and a drizzle of honey.
