Ingredients
>
2 cups old-fashioned rolled oats
>
2 cups crispy rice cereal
>
4 tbsp unsalted butter
>
1/4 cup packed brown sugar
>
1/3 cup honey
Optional:
>
1/4 cup walnuts, finely chopped
>
1/4 cup pecans, finely chopped
>
1/4 cup dried cranberries
>
2 tbsp mini chocolate chips
Steps
1
Line a 9” square baking dish with parchment. In a large bowl, combine oats and cereal.
2
In a small saucepan, combine butter, brown sugar and honey. Cook over medium, stirring occasionally, until butter has melted and sugar is dissolved. Bring to a boil, then reduce to a simmer. Boil until mixture is slightly thickened, 2 to 3 minutes.
3
Pour mixture over oats and stir to fully combine. Fold in optional ingredients, if desired: walnuts, pecans and/or dried cranberries.
4
Transfer mixture into prepared baking dish. Using a spatula or your hands, press mixture firmly into an even layer. If desired, sprinkle chocolate chips over top and press into mixture
5
Refrigerate granola for 1 hour. Use the overhanging parchment to lift granola out of baking dish. Using a serrated knife, slice into quarters then cut each quarter into 3 slices, making 12 bars. Wrap individually in plastic wrap or store in a sealed container at room temperature for 1 week or in the refrigerator for up to 1 month.
Tips
Mix up the optional ingredients with whatever nuts and fruit you have in your pantry.
