Pears with Red Wine Reduction

When it comes to the wine you use, we recommend a full-bodied, fruity wine, such as Zinfandel or Shiraz.

Ingredients

> 1 1/2 cups dry red wine (recommend Zinfandel, Shiraz, or Merlot)
> 1/2 cup granulated sugar
> 2 tablespoons lemon juice (can also add lemon zest if desired)
> 2 teaspoons vanilla extract
> 2 teaspoons ground cinnamon
> 6 whole pears, peeled, cored and cut in half (recommended Bosc or Anjou)
> 3 cups fat-free vanilla frozen yogurt

Combine all ingredients, except pears, in a medium saucepan and bring to a boil. Once the wine mixture is boiling, turn heat down to a simmer and add the pears. Simmer for 10-12 min. and then turn pears and simmer for an additional 8-10 min., or until they are easily pierced with a fork.

Remove the pears and let them cool. Boil wine sauce until the liquid has been reduced by half. Pour sauce over pears and serve each half over 1/4 cup vanilla frozen yogurt.
