Ingredients

> 1 lb lean ground beef
> 1 cup diced onion
> 1 cup diced green pepper
> 1 tsp garlic powder
> 1 tsp cumin
> 2 tsp paprika
> 1/4 cup pitted green olives, sliced
> 2 tbsp drained capers
> 1 (15 oz) can fire-roasted tomatoes
> 1 1/2 cup minute brown rice
> 1/4 cup grated Parmesan cheese

Preheat a large Dutch oven over medium high heat. Add the ground beef and brown while breaking apart with a spoon or spatula until fully cooked; about 4-5 minutes.

Add the onion, green peppers, garlic, cumin and paprika. Continue to cook for another 2-3 minutes stirring often.

Add the olives, capers, tomatoes and minute rice. Stir until well mixed. Lower heat to medium and cover. Cook for 10 minutes, then turn off the heat and let sit for 5 minutes with the lid on (this allows the rice to fluff). Stir well, bowl up and sprinkle with Parmesan cheese.
