2 tbsp olive oil

½ cup fresh parsley

2 large eggs

1 tsp minced garlic

4 thin boneless pork chops

1 cup breadcrumbs

⅔ cup grated Parmesan cheese

1 lemon, cut into wedges

Preheat the oven to 400°F. Brush olive oil onto a foil-lined baking sheet. Chop the parsley. Beat the eggs in a large bowl and mix with the garlic and half of the parsley. Cover pork chops with plastic wrap and pound with a mallet until ¼-inch thick. Season the pork with salt (in moderation) and pepper. Add the pork chops to the egg mixture and toss to coat.

Mix the breadcrumbs with the Parmesan cheese on a plate. Remove the pork chops from the egg mixture and coat with breadcrumb mixture on both sides.

Place pork chops onto prepared baking sheet and bake for 15 min. or until golden brown. Flip and bake for another 5 min. Serve with lemon wedges and sprinkle with remaining parsley.
