Ingredients

> 1 1/2 cup all-purpose flour
> 1/2 cup instant mashed potato flakes
> 1/4 tsp salt
> 1 tsp baking powder
> 1/4 tsp baking soda
> 3 tbsp chives, fresh or dried
> 1 cup buttermilk
> 1 large egg
> 2 tbsp canola oil

Steps

Preheat oven to 400 degrees. Spray muffin cups with non-stick cooking spray.

In a medium bowl, stir together flour, potato flakes, salt, baking powder, baking soda and chives.

In a measuring cup combine buttermilk, egg and oil.

Pour liquids into dry ingredients and fold in just until combined.

Spoon batter into prepared muffin pan. Bake for 12-14 minutes or until lightly browned.

Immediately remove muffins from pan and place on wire rack or in serving basket. Serve warm.
