Potato Patties

These potato patties are the ultimate in comfort food. Serve them alone, with sour cream or applesauce to bring back warm childhood memories. Mashed potatoes with garlic, onion, a little cilantro and some lemon juice cook quickly any time.

Ingredients

> 2 cups mashed potatoes
> 1 tbsp canola oil, divided
> 3 cloves crushed garlic
> 1/2 cup finely chopped onion
> 1/4 cup chopped fresh cilantro
> 2 tbsp fresh lemon juice
> 1/4 tsp salt

Steps

Peel and cube fresh potatoes and add enough water to cover. Bring to a boil and cook for about 20 minutes until tender. Drain water and mash potatoes.

Heat 1 teaspoon of the oil in a large skillet over medium heat. Add garlic and onion and saute just until soft, about 1 minute.

Add sauteed garlic and onion to potatoes with cilantro, lemon juice and salt. Form into 8 patties.

Heat skillet over medium-high heat. Cook patties in 2 batches, using remaining oil, until lightly browned on both sides, about 1 to 2 minutes per side. Serve immediately.
