Quinoa Salad with Tahini Dressing

This quick and crunchy salad is the perfect make-ahead side. Eat it right away or refrigerate it for a few hours—the longer it sits, the more flavor that’s infused.

Ingredients

> 2 (8.8 oz) pkgs precooked Nature's Promise® White Quinoa
> 1 (12 oz) bag broccoli florets
> 1/2 (8 oz) bag shredded red cabbage
> 1 lemon
> 1/4 cup tahini
> 1 1/2 tbsp honey
> 1 clove garlic, minced
> 1/4 cup roasted unsalted sunflower seeds

Microwave the quinoa according to package directions. Transfer quinoa to a serving bowl and let cool slightly to room temperature. Meanwhile, finely chop the broccoli florets. To bowl, add chopped broccoli and the cabbage. Season with salt and pepper. Stir to combine.

Juice the lemon into a small bowl. To bowl, add the tahini, honey, garlic, and ¼ cup water. Season with salt and pepper. Whisk to combine. If the dressing is too thick, thin with water, 1 tsp at a time. Toss salad with tahini dressing. Season with salt and pepper. To serve, top with the sunflower seeds.
