Rainbow Veggie Rice Salad with Chicken

We’ve dressed our bowls with ranch, but feel free to use the dressing of your choice.

> 20 oz Nature's Promise® Frozen Organic Brown Rice
> 1 cup mixed cherry tomatoes
> 1 cucumber
> 1 bunch green onions
> 1 (15.2 oz) can corn
> 2 tbsp lemon juice
> 2 tbsp extra virgin olive oil
> 1 cup shredded red cabbage
> 1 ½ cups shredded roasted chicken
> ½ cup Bolthouse® Farms Ranch Dressing


Cook the rice according to package directions. Halve the cherry tomatoes and slice the cucumbers and green onions. Rinse and drain the corn. Toss the rice with lemon juice, olive oil and green onions. Season with salt and pepper to taste.
Divide the rice into 4 bowls. In lines, arrange the cucumber, tomatoes, corn, cabbage and chicken. Drizzle with ranch dressing and season with black pepper.


Like it spicy? Add a drizzle of your favorite hot sauce.


You can substitute shredded chicken for grilled steak.
Want more color? Add red bell peppers or a piquant salsa fresca.
