Rainier Cherry Crostinis

With the creaminess of cheese, saltiness of prosciutto, and sweetness of Rainier cherries—these hors d'oeuvres have a little bit of everything.

> 1 baguette
> 10 oz soft goat cheese
> 1 (3 oz) pkg prosciutto
> 1 lb Rainier cherries
> 3 mint leaves, finely chopped
> 2 tbsp extra virgin olive oil
> 1 tsp honey


Slice baguette and toast at 350°F for about 7 minutes.
Spread a teaspoon of goat cheese on each slice and top with a thin strip of prosciutto.
Halve the Rainier cherries and place one half on each slice of bread.
Top with chopped mint and a drizzle of olive oil and honey.
