Rainier Cherry Jam

This three-ingredient homemade jam is a great way to incorporate sweet and seasonal Rainier cherries into more of your favorite summertime snacks. Try it with crackers or toasted bread!

Ingredients

> 3 cup Rainier cherries, pitted and halved
> 2 tbsp lemon juice
> 3/4 cup sugar

Add the cherries to a saucepan with the lemon juice and bring them to a boil.

Cook for a few minutes until the cherries release their juices.

Add the sugar and cook until sugar is dissolved. Then, let the mixture return to a boil and cook over medium-high heat for two minutes.

Use a potato masher to gently mash the fruit into a jam-like consistency.

Continue to simmer for about 20 minutes, stirring often. The jam will be loose but should coat the back of a spoon. It will thicken more as it sets.

Transfer the jam to a glass jar and cool completely. Cover and store in the refrigerator for up to three weeks.
