Ingredients

1 lemon, zested

4 oz uncooked rice noodles

1 tbsp peanut or canola oil

1/2 tsp crushed garlic
>
1/2 cup sliced white onion
>
2 tsp lite soy sauce
>
1/2 tsp granulated sugar
>
1 large red bell pepper, chopped
>
1/4 cup chopped scallions
Steps

Soak rice noodles in warm water for 20 minutes, drain and set aside.

Heat oil in a medium skillet, add garlic and onion and cook until softened.

Add noodles, lemon zest, soy sauce, sugar and chopped pepper and stir well.

Cook until the pepper softens slightly. Sprinkle with scallions and serve immediately.
