Rice Noodles with Red Peppers

In just half an hour, an impressive Asian-inspired noodle dish is ready for your guests. The vibrant colors from red bell peppers and scallions, and the zesty flavor from lemon will surely put a smile in their faces. Ideal as a starter, it is also great as a fish side dish.

> 1 lemon, zested
> 4 oz uncooked rice noodles
> 1 tbsp peanut or canola oil
> 1/2 tsp crushed garlic
> 1/2 cup sliced white onion
> 2 tsp lite soy sauce
> 1/2 tsp granulated sugar
> 1 large red bell pepper, chopped
> 1/4 cup chopped scallions


Soak rice noodles in warm water for 20 minutes, drain and set aside.
Heat oil in a medium skillet, add garlic and onion and cook until softened.
Add noodles, lemon zest, soy sauce, sugar and chopped pepper and stir well.
Cook until the pepper softens slightly. Sprinkle with scallions and serve immediately.
