Roast Beef Salad with Grilled Focaccia

> 1 (7.5 oz) Nature's Promise Free from Rosemary Olive Oil Focaccia
> 2 tbsp olive oil
> 1/2 small red or white onion
> 1/2 (5 oz) container Nature's Promise Baby Kale Salad Mix
> 1/3 cup blue cheese dressing
> 1/4 lb thinly sliced deli roast beef
> 1 oz chunk pecorino cheese


Set grill to medium-high. Cut the focaccia into ½-inch-wide slices. Brush cut sides with the oil. Grill 2–3 min., turning occasionally, until grill marks appear.
Very thinly slice the onion. In a large bowl, toss the spring mix with the blue cheese dressing until well coated, then arrange on a large serving platter.
Tear the roast beef into ribbons and arrange over greens. Top with onion. With a vegetable peeler, shave the pecorino over the salad. Serve with the focaccia.
