Roasted Grape Tomatoes

Grape tomatoes take on another form when roasted to caramelization. From side dish to condiment to pasta sauce, the uses are endless.

> 3 cloves garlic
> 4 pints grape tomatoes
> 2 tbsp olive oil
> 6 sprigs thyme


Preheat oven to 400°F. Thinly slice the garlic cloves.
Onto large rimmed baking sheet, add garlic, tomatoes, oil, thyme, salt, and pepper. Toss to combine.
Roast 30 min., until tomatoes are caramelized and softened, stirring once halfway through. Discard thyme and serve.
