Salad with Avocado, Mango and Strawberries

This salad combines exotic, sweet and fresh flavor to make a showstopper when paired with chicken or fish.

Ingredients

> 1/2 red pepper
> 1 lime ( scrubbed )
> 1 tsp ground cumin
> 2 tbsp sunflower oil
> 1 small mango
> 1 cup strawberries ( about 4.5 oz. )
> 1 ripe avocado
> 1 baby green romaine heart
> 8 sprigs cilantro

Steps

Remove the seeds and chop the pepper finely. Zest and juice the lime.

Whisk the lime juice with the zest, red pepper, cumin and oil to make a dressing. Season with salt and pepper to taste.

Peel the mango and cut the flesh into cubes. Remove the tops from the strawberries and cut into quarters.

Cut the avocado in half lengthwise. Remove the pit and scoop out the flesh with a spoon. Cut the flesh into cubes.

Spoon the dressing onto the fruit. Let the fruit marinate for 10 minutes. Cut the lettuce into strips and coarsely chop the cilantro.

Just before serving, sprinkle in the cilantro and lettuce and toss.
