Sausage Sloppy Joes with Crispy Polenta Fries

This kid-friendly dish gets an adult-approved upgrade from Italian sausage. Premade polenta is sliced and pan-fried for an irresistible pairing.

Ingredients

> 1 lb Italian sausage
> 2 (18 oz) tubes polenta
> 3/4 cup flour
> 3 tbsp parsley
> 3/4 cup ketchup
> 2 tbsp yellow mustard
> 2 tbsp light brown sugar
> 2 tsp Worcestershire sauce
> 1/4 cup canola oil
> 4 hamburger buns

Remove sausage meat from casings. In a medium nonstick pan, cook sausage on medium-high 10 min., until sausage is browned and crumbled, using a spatula to break up meat. Discard any rendered fat in pan.

Meanwhile, slice the ends from each polenta. Cut each tube in half and slice into thick fries, around 4-x ½-inch sticks. To gallon-size resealable plastic bag, add flour, salt, and pepper. Add polenta pieces into bag, gently coating with flour.

Chop parsley. Into pan with sausage, add ketchup, mustard, brown sugar, Worcestershire sauce, parsley, salt, and pepper. Heat on medium-high until mixture is simmering. Reduce heat to low and cook 5 min., stirring occasionally.

In a large nonstick skillet, heat oil on high. Working in batches, cook polenta until golden brown, about 3–4 min. per side. Transfer to a paper towel-lined plate. Serve sloppy joe mixture on hamburger buns with polenta fries.
