Savory Mediterranean Oatmeal with Eggs

Who says oatmeal has to be sweet? This savory oatmeal is inspired by the flavors of the Mediterranean with sun-dried tomatoes, goat cheese, and oregano. Try it for breakfast, lunch, or dinner.

Ingredients

> 1 3/4 cups water
> 2 cups Nature's Promise® Organic Baby Spinach and Kale
> 1 cup Nature's Promise® Organic Quick Oats
> 1/2 cup halved grape tomatoes
> 1/4 cup jarred julienned sun-dried tomatoes
> 1/4 tsp dried oregano
> Pinch garlic powder
> 1 tbsp olive oil
> 2 large eggs
> 1/4 cup crumbled goat cheese
> 2 tbsp chopped parsley (optional)

In a medium pot on high, bring the water to a boil. To pot, add the spinach mix, oats, tomatoes, sun-dried tomatoes, oregano, and garlic powder. Season with salt and pepper. Reduce heat to medium, and cook 1–2 min., until liquid is absorbed, stirring occasionally. For a thicker oatmeal, cook 2–4 min. Remove from heat when desired consistency is reached.

In an 8-inch nonstick skillet, heat the oil on medium-high. Crack the eggs into skillet and cook 3–4 min., until whites are set. Season with salt and pepper.

Divide cooked oatmeal between 2 bowls. Top bowls with the goat cheese. Add 1 fried egg to each bowl and garnish with the parsley, if desired.
