> 2 (28 oz) cans whole peeled tomatoes
> 1 cup diced onion
> 1 tbsp minced garlic
> 3 tbsp olive oil
> 2 fresh tomatoes
Set all ingredients except for the fresh tomatoes in the bowl of a 6 or 7 quart slow cooker and stir to combine. Set cooker to high and cook, 4 hours. Dice fresh tomatoes and set aside.
Purée sauce with an immersion blender until smooth and stir in diced tomatoes. Transfer sauce to a pot and reduce slightly over medium high heat, 5 min. Season to taste with salt (in moderation) and pepper before stirring in with your favorite pasta.
