Slow Roasted Salmon with Grape Salsa

This salmon is roasted low and slow to flakey perfection and topped with a sweet and spicy salsa.

Ingredients

> 1 lb salmon fillets
> 1 tbsp olive oil
> 2 cups seedless red grapes
> 1 jalapeño
> 2 green onions
> 2 tbsp chopped cilantro
> 2 tbsp red wine vinegar
> 1 tsp minced garlic

Preheat the oven to 275°F. Lay salmon on a parchment-lined baking sheet and drizzle with olive oil. Season with salt (in moderation) and pepper. Roast until the salmon flakes easily and is cooked through, about 20 min.

Meanwhile, prepare the salsa. Halve the grapes and mince the jalapeño, removing the core. Slice the green onions. Chop the cilantro. Place grapes, jalapeño, and green onions in a bowl with chopped cilantro, vinegar, and garlic. Stir to combine. Cover with plastic wrap and place in the refrigerator until salmon is cooked.

Remove salmon from oven and top with grape salsa
