Southwest Sausage Foil Packet

Make cleanup a snap with these Southwest sausage foil packets. Aluminum foil holds the sausage, beans, pineapple, onion, peppers and spices for a spicy, complex tasting meal that cooks quickly all together on the grill.

Ingredients

> 8 oz pork sausage links chopped
> 2 cups canned black beans
> 1 1/2 cups chopped pineapple
> 1/2 cup finely chopped red onion
> 2 tbsp minced jalapeño pepper (about 1 pepper)
> 2 tbsp lime juice, divided
> 1 tsp ground cumin
> 1/4 tsp chili powder
> Freshly ground black pepper, to taste
> 2 tbsp chopped cilantro

Preheat grill to medium or oven to 375°F. In a medium bowl, combine the sausage, black beans, pineapple, red onion, and jalapeno.

Stir in lime juice, cumin, chili powder and pepper. Spray four large pieces of heavy duty aluminum foil with cooking spray and distribute mixture evenly, fold and seal each packet.

Cook for 20 minutes. Remove packets from heat; let stand 10 minutes before opening.

Carefully open the foil packets and stir the contents. Sprinkle with cilantro.

Serve alone, over rice, or in tacos.
