Southwestern Bean Salad

Canned corn and beans tossed with fresh cherry tomatoes and bright cilantro makes for an easy and portable salad in no time.

> 1 (0.5 oz) pkg fresh cilantro
> 1 pint cherry tomatoes
> 2 (15.25 oz) cans corn
> 2 (15.5 oz) cans black beans
> 1 tbsp chili powder


Coarsely chop the cilantro. Halve the cherry tomatoes. Drain and rinse the corn and beans.
In a large bowl, combine chili powder, cilantro, tomatoes, corn, and beans. Season with salt and pepper.


MAKE IT ZING! Add a squeeze of fresh lime juice.


Serve with chips for scooping or as a side salad.
