Ingredients

1/2 (16 oz) box linguini

1 tbsp olive oil

1 lb medium peeled and deveined shrimp

1 tbsp minced garlic
>
1 tsp red pepper flakes
>
1 (4 oz) carton heavy cream
>
1 tbsp lemon juice
>
1 cup roasted red pepper strips
>
1/4 cup grated Parmesan

Bring a large pot of water to boil over high heat. Cook linguini according to package directions. Drain and reserve ½ cup of the pasta water.

Return the pasta pot back to the stove top and reduce heat to medium high. Add the olive oil, shrimp, garlic and crushed red pepper. Cook for 2-3 minutes or until shrimp are pink and firm.

Add the cream, reserved pasta water, lemon juice, and roasted red peppers. Bring mixture to a boil and reduce heat to medium. Add the cooked linguini to the pot and toss in the sauce. Sprinkle in Parmesan cheese, bowl up and enjoy!
