Spinach Salad with Pasta and Avocado

Ingredients

> 8 oz fresh five-cheese ravioli
> 1 cup loosely packed fresh basil ( about 1/2 oz. )
> 2 slices white bread
> 8 oz cherry tomatoes (about 20)
> 2 tbsp olive oil
> 1 ripe avocado
> 6 cups loosely packed washed spinach ( about 10oz. )
> 7 tbsp garlic salad dressing

Steps

Cook the pasta according to the package directions, until al dente.

While the pasta cooks, coarsely chop the basil. Cut the white bread into cubes and halve the cherry tomatoes.

Heat the oil in a frying pan and fry the bread cubes for 5 minutes until golden brown and crispy. Stir frequently.

Meanwhile cut the avocado in half lengthwise and remove the pit. Peel and cut the flesh into slices.

Chop the spinach coarsely and place in a salad bowl. Toss with basil and salad dressing.

Toss the pasta, avocado and tomatoes with the spinach and add croutons. Add salt and pepper to taste.
