Ingredients

2 cups ripe stone fruit ( peaches, nectarines, apricots)

1 tbsp lime juice

1 tbsp canola oil

1/4 cup chopped red onion

1/2 cup chopped bell pepper (red or green)

1 tbsp chopped fresh cilantro (or parsley or mint)

pinch of salt
