> 6 medium tomatoes
> 2 cups prepared stuffing
> 3 tbsp chopped chives
> 2 tbsp olive oil
> 1/4 cup grated Parmesan cheese
Preheat oven to 375°F. Cut thin slices off tops of the tomatoes and discard. With small spoon, scoop out insides, leaving walls intact. Season tomato cavities with salt and pepper.
In a medium bowl, combine the stuffing, chives, and olive oil. Season with salt and pepper to taste. Divide mixture among tomatoes, stuffing into cavities.
Arrange tomatoes in a greased 8x8-inch baking dish. Sprinkle with the Parmesan cheese. Bake 25–30 min., until tomatoes are tender and stuffing is hot.
