Ingredients

3 1/2 cups whole strawberries

1 1/3 cup confectioners' sugar

1 cup heavy whipping cream

1 vanilla bean

1 cup light cream cheese

1 1/4 cups moscato or apple juice

2 (3 oz) pkgs ladyfingers

1 cup raspberries
Steps

Stem the strawberries and divide in half (lengthways).

Blend first half with 2 tbsp confectioner’s sugar.

Halve the remaining strawberries and sprinkle with 2 tbsp confectioner’s sugar. Whip the cream.

Slice the vanilla bean lengthwise and use a small knife to scrape out the beans inside

Fold the cream cheese with 2 tbsp wine or apple juice, vanilla beans and the rest of the confectioner’s sugar. Fold in the whipped cream.

Spread half of the ladyfingers across the bottom of the dish. Sprinkle with half the wine.

Spoon half of the cream mixture on top and drizzle the strawberry purée over the cream.

Layer over the remaining ladyfingers, wine and mascarpone mixture. Top with halved strawberries and raspberries. Cover and chill for 2 hours before serving.
Tips
Don’t throw out the vanilla pods! Store them in a jar filled with sugar to make homemade vanilla sugar.
