Sunnyside Up Pancakes

A little magic in the morning: Fluffy pancakes are topped with a sweet ‘fried egg’.

> 2 cups pancake mix
> 1 1/2 cups milk
> 2 eggs
> cooking spray
> 12 tablespoons vanilla Greek yogurt
> 2 (15 oz) cans cling peach halves, drained


In a mixing bowl, stir together pancake mix, milk and eggs until well blended.
Spray skillet with cooking spray and heat. Drop about ¼ cup of the mixture into pan. When bubbles appear, flip pancakes. Continue cooking until golden. Transfer cooked pancakes to a plate and cover with foil to keep warm while you make remaining pancakes.
Put 2 pancakes on each plate. Garnish each pancake with 1 tablespoon vanilla Greek yogurt and 1 peach half to resemble a fried egg.


Drizzle with maple syrup or honey if desired.
