Ingredients

1 head cauliflower

3/4 cup cornstarch

3/4 cup flour

1 tsp baking powder

2 tsp ground ginger

2 tsp garlic powder

1/2 cup vegetable oil

4 green onions

1/2 cup sweet and sour sauce

2 tbsp sesame seeds

Cut the cauliflower into small florets. In a medium bowl, whisk together cornstarch, flour, baking powder, ground ginger, and garlic powder. Season with salt. Add 1 cup water and whisk until smooth.

Line a baking sheet or large platter with paper towels. In a 12-inch nonstick skillet, heat the oil on medium-high until hot but not smoking. Dip each piece of cauliflower into batter, letting excess drip off, and place in oil. In 2 batches, fry cauliflower 5–6 min., until golden brown and crispy, stirring occasionally. With a slotted spoon, transfer to the lined baking sheet. Season with salt.

Meanwhile, thinly slice the green onions. In a large bowl, gently toss the fried cauliflower with the sweet and sour sauce until well coated.

To serve, top with green onions and sesame seeds. Serve immediately.
Tips
Serve over white rice with steamed broccoli for a better-than-takeout dinner.
