Sweet and Spicy Broccoli and Carrots

Prepped vegetables like cut broccoli florets and shredded carrots from the store can be a weeknight lifesaver. Try this side with shrimp or pork chops.

> 4 cups broccoli florets
> 1/2 (10 oz) pkg shredded carrots
> 1/4 cup sweet Thai chili sauce
> 1 tbsp soy sauce


Heat a large pot of water to a boil on high. Season with salt. Add the broccoli and cook 4 min.
Add the carrots to the same pot and cook 2 min., until broccoli and carrots are tender. Drain well.
Toss with the chili sauce and soy sauce.


To make this ahead, cook the vegetables through STEP 1 and let cool completely, then refrigerate. When ready to serve, combine broccoli with carrots and microwave 2 min., until heated through, before proceeding with STEP 3.
