Sweet Potato Salad with Mariani Almonds, Cranberries and Arugula

Ingredients

> 2 1/2 lbs orange flesh sweet potatoes, peeled and sliced 1/2-inch thick
> 1 tablespoon olive oil
> 1/2 cup thinly sliced and quartered red onion
> 1/3 cup dried cranberries
> 4 cups baby arugula
> 1/2 cup Mariani Sliced Almonds, toasted

Dressing

> 1/4 cup extra virgin olive oil
> 3 tablespoons white wine vinegar
> 1 tablespoon honey
> 1/2 teaspoon garlic salt
> Freshly ground pepper to taste

Toss sweet potatoes in a bowl with olive oil. Lay on a foil-lined sheet and roast in oven at 350°F for 30 minutes or until tender.

Whisk together all dressing ingredients in a medium bowl. Add sweet potatoes, red onion and cranberries and toss lightly to coat.

Place arugula on a large platter. Top with sweet potato mixture and sprinkle with almonds. Season with pepper and serve immediately.
