Tacos with BBQ Pork and Pineapple

This simple, savory filling is also good over rice for a quick meal.

Ingredients

> 1 lb boneless pork loin chops
> 1 onion
> 2 cloves garlic
> 1 tbsp vegetable oil
> 1/3 cup barbecue sauce
> 1 (10 oz) bag shredded red cabbage
> ½ bunch cilantro
> 1 (20 oz) can pineapple chunks in natural juices, drained
> 16 prepared 4 inch tortillas, warmed

Sprinkle the pork with salt (in moderation) and pepper and trim away any fat. Cut the onion in half and slice thinly. Slice the garlic.

Heat the oil in a heavy saucepan over high heat and cook the pork until browned and cooked through, about 6 min., turning once. Transfer to a plate and set aside.

Add the onion, garlic, salt (in moderation) and pepper to the pan and sauté 5 min. over low heat. Slice the pork into thin strips and add along with any meat juices to the pan. Add the barbecue sauce and toss until pork is warmed through and coated with sauce, 2 min.

Halve the drained pineapple chunks and chop the cilantro. Top the warmed tortillas with meat, cabbage, pineapple and cilantro.
