TLT Bagel Sandwich (Tempeh, Lettuce, Tomato) with Avocado and Basil Mayo

Ingredients

> 2 (8 oz) pkgs tempeh
> 2 tbsp olive oil
> 1/2 tsp smoked paprika
> 1/2 tsp garlic powder
> 1/4 cup mayonnaise
> 6 basil leaves
> 2 vine-ripened tomatoes
> 1 head romaine lettuce
> 4 bagels

Preheat a 12 inch nonstick pan over medium high heat. Slice the tempeh into ¼ thick strips. Mix olive oil with paprika and garlic powder. Brush both sides of tempeh with olive oil mixture. Season with salt (in moderation) and pepper. Cook the tempeh for 2-3 minutes per side or until lightly browned on both sides. Remove from pan and set aside.

Meanwhile, slice tomatoes into ¼ inch thick slices and peel and slice the avocado. Chop the basil leaves and mix with the mayonnaise

Toast bagels and spread one half with basil mayonnaise. Top with browned tempe, tomato, lettuce and avocado.
