Tofu Parmesan

Even if you aren't a vegetarian, you'll still love the flavor and texture of this tofu Parmesan. Tofu takes the place of traditional chicken or veal in this vegetarian dish. Bread crumbs, egg, Parmesan, spices and tomato sauce help to make this meal a big hit.

Ingredients

> all-purpose flour (about 3 tablespoons )
> 1 egg, beaten
> 1/4 cup dry bread crumbs
> 1 tbsp grated Parmesan cheese
> 2 tsp dried oregano, divided
> ground black pepper to taste
> 1 pkg (14 oz) Nature's Promise® Organic Firm Tofu
> 1 tbsp olive oil
> 2 cups tomato sauce or crushed tomatoes
> 1/2 tsp dried basil
> 1 clove garlic, minced
> 2 oz shredded part-skim mozzarella cheese (1/2 cup)

Spoon flour onto a small plate. Pour egg product into a shallow bowl. On another plate, combine bread crumbs, Parmesan cheese, 1 teaspoon of the oregano and black pepper.

Slice tofu into 1/2-inch thick slices. One at a time, press tofu slices into flour, turning to coat all sides, dip into egg, then coat with crumb mixture.

Heat half of the oil in a non-stick skillet over medium heat. Cook tofu slices in two batches, turning to brown both sides using remaining oil for second batch.

Combine tomato sauce, basil, garlic and remaining oregano. Place a thin layer of sauce in a 13x9-inch baking pan. Arrange tofu slices on top of sauce. Spoon remaining sauce over tofu.

Bake at 400F for 20 minutes. Top with shredded mozzarella during last 5 minutes of baking.
