Ingredients

4 whole wheat pitas

1/4 cup light mayonnaise

1 tbsp lemon juice

1 tsp Dijon mustard

1 (14 oz) pkg extra-firm tofu
>
2 stalks celery
>
1/2 cup sliced olives

1/4 cup dill

Warm the pita bread according to package directions.

Meanwhile, in a bowl combine mayonnaise, lemon juice, and mustard. Cut the tofu into ½-inch cubes and mince the celery. Gently fold the tofu, celery, and olives into the mayonnaise mixture. Season with salt (in moderation) and pepper. Coarsely chop the dill and set aside.

Halve the pitas and fill with tofu salad. Garnish with dill.
