2 (15 oz) can chickpeas

2 tbsp olive oil

1 tbsp garlic powder

2 tsp truffle oil

1/2 tsp salt

1/4 cup parsley

Preheat the oven to 425°F. Drain and rinse the chickpeas. Using paper towels, pat and roll chickpeas until very dry, discarding any loose skins. Toss chickpeas with the olive oil, garlic powder, truffle oil, and salt. Place in an even layer on a parchment-lined baking sheet. Bake 28-30 min., until crispy and golden brown, shaking pan occasionally.

Meanwhile, finely chop parsley. Toss chickpeas with parsley. Let cool 15 min. before serving.
