Tuna-Avocado Boats

These no-cook avocado boats are perfect for a fast lunch or dinner. With tons of fresh vegetables and lean tuna, this recipe will keep you powered throughout the day.

Ingredients

> 1 lime
> 1/4 cup plain nonfat plain yogurt
> 2 tbsp mayonnaise
> 4 large ripe avocados
> 2 (5 oz) cans Nature's Promise ® Solid White Albacore Tuna in Water, drained
> 1/4 cup finely chopped bell pepper
> 1/4 cup finely chopped red onion
> 1 tbsp finely chopped cilantro, plus more to serve
> Hot sauce, to serve (optional)

Slice the lime in half. Cut one half into wedges and set aside. Juice remaining lime half into a medium bowl. Add the yogurt and mayonnaise and season with salt and pepper. Whisk until smooth.

Cut the avocados in half lengthwise and twist to separate the halves. Remove the pits. Using a small spoon, scoop some avocado from the center of each half, leaving a ½-inch border around the skin. Coarsely chop scooped avocado and add to bowl of yogurt dressing.

Add the tuna, bell pepper, onion, and cilantro to same bowl and stir gently to combine. Season with salt and pepper. Divide tuna salad among avocado halves. Drizzle with a little hot sauce, if desired. Garnish with cilantro and lime wedges, if desired.
