Ingredients

1/2 cup mayonnaise

1 tbsp minced chipotle pepper in adobo sauce

1 clove garlic, crushed

1 tbsp lemon juice
>
4 tbsp olive oil

4 slices eggplant, 1/2 inch thick
>
4 slices tomato
>
4 turkey burgers (1 lb. pkg.)
>
4 hamburger buns
>
1 cup arugula

Combine the mayonnaise, chipotle, crushed garlic and lemon juice in a small bowl.

Brush turkey burgers with olive oil and then season with pepper and salt, in moderation. Grill 4–5 minutes per side, or until done.

Brush eggplant with oil and grill over high heat until golden brown. Flip slice and grill until cooked through.

Grill the cut sides of the hamburger buns until slightly toasted.

Top each bun with arugula, grilled eggplant, tomato, turkey burger and a dollop of mayo and serve.
