Vegetable Stir-Fry with Sesame, Cucumber and Egg

Slices of cucumber are delicious briefly stir-fried and add a nice bit of crunch to this vegetarian dish.

Ingredients

> 3 tbsp vegetable oil
> 1 (16 oz) bag frozen stir fry veggies
> 4 eggs, beaten
> 3 tbsp tamari soy sauce
> 1 (8.8 oz) pkg 90-second white rice
> 1 Hot house cucumber
> 2 tbsp sesame seeds

Heat 2 tbsp oil in a large skillet or wok and add frozen vegetables, ½ cup water and tamari. Cover and simmer 5 min., or until vegetables are tender crisp. Meanwhile, heat remaining oil in another skillet and cook eggs 4 min., or until set. Microwave rice according to package directions.

While vegetables and eggs cook, halve the cucumber lengthwise and cut into slices. When vegetables are ready, turn heat to high, add cucumber slices and stir-fry for 1 min. Transfer eggs to a cutting board and cut into thin strips.

Divide the rice among four bowls and spoon the vegetables over. Top each bowl with egg slices and sprinkle with sesame seeds.
