Ingredients

1 9 10 oz) pkg frozen vegetable burgers

1 tbsp canola oil

1 medium onion

1 bell pepper

1 cup salsa

1 tbsp yellow mustard

2 tbsp brown sugar

1 (12 oz) bag shredded cabbage

1/4 cup vinegar
>
2 tbsp sugar
>
2 tbsp mayonnaise
>
4 seeded hamburger buns

Preheat a large skillet over medium high heat. Chop the onion and pepper and add to the hot pan with the vegetable oil. Cook for 3-4 minutes or until vegetables are tender, stirring occasionally.

Meanwhile chop or break apart the vegetable burgers into large crumbles. Add to the pan with the vegetables and cook for 1-2 minutes. Add the salsa, mustard and brown sugar and bring liquid to a simmer. Reduce heat to low and cover and cook for 10-12 minutes.

Mix together the mayonnaise, vinegar, and sugar. Toss with cabbage and let stand at room temperature while sloppy joe mixture simmers.

Scoop sloppy joe mixture onto buns and top with slaw. Enjoy!
