1 (12 oz) bag SteamReady corn

1 cup cherry or grape tomatoes

1 avocado

1 (12 oz) pkg sliced mixed mini peppers

1/4 cup chives, chopped

2 tbsp olive oil

1 tbsp lime juice

1 cup salsa

4 pita pockets

Preheat oven to 400F. Place frozen burgers on a baking sheet and cook for 10 min. Microwave corn according to package directions; set aside to cool. Halve the tomatoes. Cut the avocado in half and remove the pit. Scoop out the flesh with a spoon and cut into slices.

Combine the sliced peppers with the corn, olive oil and lime juice. Season with salt (in moderation) and pepper and toss. In another bowl, combine the halved tomatoes with the salsa and the remaining chives.

Warm the pitas according to package directions. Slice open and fill each with a burger, some of the salsa and slices of avocado. Serve with the corn–pepper salad and the remaining salsa.
Tips
Replace the chives with green onions.
