Ingredients

1/2 (2.1 oz) pkg fully cooked sliced bacon

2 tbsp olive oil

3 (12 oz) pkg chopped sweet kale salad kit with poppyseed dressing

1 lemon

1/2 (4 oz) pkg goat cheese

Microwave the bacon according to package directions. Let cool and then crumble into pieces. Meanwhile, in a 12-inch skillet, heat the oil on medium. Remove and reserve poppyseed dressing packets and cranberry-seed packets from the kale salad kits. Add the greens from salad kits to skillet and sauté 3–4 min., stirring occasionally, until kale is bright green and tender.

To a large serving bowl, add 2 tsp lemon zest and 2 tbsp lemon juice. Add 2 packets of the poppyseed dressing and all 3 cranberry-seed packets to bowl. Season with salt and pepper. Whisk to combine. Add the sautéed kale salad. Toss to combine with dressing. Top with bacon and crumbled goat cheese, to serve.
Tips
Save the leftover poppyseed dressing for a quick salad later in the week.
