Western Omelet Frittata

Ingredients

> 4 oz thick-cut  deli ham
> 1 small green bell pepper
> 1/2 small red onion
> 2 tbsp butter
> 8 large eggs
> 1/2 cup milk
> 2 green onions

Preheat oven to 375°F. Chop the ham and green pepper. Finely chop the red onion.

In an oven-safe, 10-inch nonstick skillet, melt the butter on medium. Add green pepper, red onion, and salt. Cook 5 min., stirring often. Stir in ham and cook 2 min.

Meanwhile, in a large bowl, whisk the eggs, milk, salt, and pepper until well combined. Add to skillet. Cook 2 min., stirring constantly. Cook 3 min., without stirring. Transfer skillet to oven. Bake 15 min., until eggs are set. Thinly slice the green onions and sprinkle over frittata.
