Whipped Cottage Cheese Toast with Chia Seed Jam

Ingredients

> 2 cups frozen strawberries, thawed
> 2 tsp sugar
> 2 tbsp Nature's Promise ® Chia Seeds
> 1 cup no-salt-added low-fat small curd cottage cheese
> 4 slices multigrain bread, toasted

In a medium pot on medium, heat the strawberries and sugar. Cook 10–12 min., stirring occasionally, until strawberries start to break down and juices thicken. Remove from heat and mash strawberries with a potato masher. Stir in the chia seeds and cool completely, about 20 min. Jam will thicken as it cools.

When ready to eat, transfer the cottage cheese to a food processor or blender and process until smooth. Divide whipped cottage cheese among the bread slices. Top with some of jam and serve immediately. Any remaining jam can be stored in the refrigerator for 1 week.
